The decisions that matter
The dishes
Famous & unique South African dishes
The food that defines the country — what it is, where it comes from, and where to eat the real thing. Not a recipe blog: a field guide to the plates that matter.

Melktert (Milk Tart)
A Cape custard tart dusted with cinnamon — soft, barely sweet, and the country's most-baked tart.

Biltong
Air-dried, vinegar-cured meat — beef most often — cut into chewy strips. The country's universal snack.

Vetkoek & Mince
Fried bread split and filled with curried mince — a street-and-home classic across the country.

Sosaties
Cape Malay marinated lamb kebabs — sweet-sour, spiced, and grilled over coals.

Boerewors
A coiled farmer's sausage of beef and pork, spiced with coriander and cooked over coals — the braai's centrepiece.

Braai / Shisa Nyama
The South African cookout — meat over open coals, from a backyard braai to a township shisa nyama, and the country's social ritual.

Bobotie
Cape Malay spiced minced meat baked with a savoury egg-custard top — South Africa's most famous home dish.

Smoorsnoek
A stew of smoked snoek (a local fish) with potato, tomato and onion — a Cape West Coast classic.

Potjiekos
A cast-iron three-legged pot stew, slow-cooked over coals — meat and vegetables layered, never stirred.

Waterblommetjie Bredie
A Cape stew of lamb and waterblommetjies (pond flowers) — a seasonal, locally-sourced winter dish.

Chakalaka
A spicy relish of onion, tomato, carrot and beans — the township staple that goes with everything.

Pap
Maize-meal porridge — stiff (stywe pap) or soft — the staple carbohydrate of the country.

Magwinya
Fried dough 'fat cakes' — a popular township and rural snack, eaten with relish or mince.

Malva Pudding
A baked, sticky sponge of apricot jam and butter, served hot with custard — the Cape's national dessert.

Koeksister
A plaited or ball-shaped doughnut, fried and drenched in syrup — two versions: the Cape Malay spiced ball and the Afrikaner plaited crisp.

Durban Curry
The Durban Indian curry — hotter, redder, and richer than its Indian ancestor, served with rice or in a bunny.

Pickled Fish
A Cape spiced pickled fish — snoek or hake in a turmeric-onion vinegar — the Easter dish of the Cape.

Gatsby
A long Cape Town submarine sandwich — a full loaf loaded with curry-slathered chips, meat and salad.

Tomatie Bredie
A Cape slow-stew of lamb and tomato — the simplest and best of the bredie family.

Bunny Chow
A hollowed-out loaf of bread filled with curry — Durban's Indian-community invention, eaten with the fingers.
